How to choose high quality honey?
Many guidelines for determining the quality of honey recommend using a chemical pencil. But in this way only the moisture content of honey can be determined. In addition, a chemical pencil is very rare in our time. Moisture is found in any honey, but in different proportions. The permissible moisture content is no more than 24 percent, if higher, honey begins to ferment.
The consumer can determine the quality of honey only with litmus paper, which is practically not found in Moldova. A more effective result of determining the quality is provided by laboratory analysis. But such a check of honey is expensive, a complete analysis reaches 200 euros and even more. A test for only one antibiotic will cost 300 lei. There are three main antibiotics, honey is still needed to analyse the content of sugar, methylfurfural, and so on. And a decent amount of detailed analysis runs up. Only large apiaries can allow such a check. Small bee farms can not afford such analysis.
Of course, agricultural markets laboratories do not have the necessary equipment and specialists to carry out such analysis. The most that they can do is test the honey for sugar content.
